E is for Eggs


In my humble opinion, one of the few foods that can genuinely claim the title of superfood, eggs are an inexpensive source of quality protein and a little capsule of nutrition.

The white is a source of selenium, vitamin D, B2, B6, B12, zinc, iron and copper and the yolk contains vitamins A, D, E and K and the antioxidants lutein and zeaxanthin (good for eye health šŸ‘ā€šŸ—Ø) Phew!

Eggs contain dietary cholesterol but this won't affect the amount of "bad" cholesterol in the blood and one study found eggs may actually help raise our "good" HDL cholesterol.

Eggs can also be a good source of omega 3 (depending on what the chickens have been fed on) which helps to prevent heart disease.

Scrambled, poached, boiled, baked or fried, eggs are hugely versatile, easy to cook and very very tasty šŸ˜‹
